Steamed Egg Tofu (Wednesday)

Ingredients :

150g silken tofu
50g shrimps
2 large eggs
50g minced meat
400ml stock

Seasonings :
1 teaspoon light soy sauce
Pinch of pepper

Method :

1. Cut silken tofu into 2 cm cubes, blanch them pat dry.

2. Shell shrimps.

3. Lightly beat eggs in a big bowl. Add minced meat and mix well. Slowly pour in stock and add light soy sauce and pepper.

5. Put silken tofu and shrimps into the bowl and mix well with the minced meat. Cover bowl with aluminium foil.

6. Bring water in the steamer to a boil and steam over medium heat for 10 minutes.

Remark:

Make sure that the shiny side of the aluminium foil is facing up. This prevents water droplets from dripping into the bowl.
