Stewed Pork Belly (Friday)

Ingredients :

800g pork belly oil (for deep-frying)
Marinade 2 tablespoon rice wine
1/2 teaspoon salt
Braised stock
4 tablespoon honey
1/2 cup light soya sauce
1/2 cup red rice
1 stalk spring onion
1 small piece ginger
Pinch of salt
2 kg water

Method :

1. Clean pork belly and blanch in boiling water.

2. Prick a lot of holes on the skin and marinate with marinade ingredients for 10 minutes.

3. Heat up oil for deep-frying, deep-fry pork belly until the skin puff up. Dish up.

4. Bring braised stock to boil, put in pork belly and stew over low heat for 2 hours or until tender.

5. Remove and ready to serve.
