Cucumber and Pork Soup

Serves : 4

Ingredients :

1 1/3 liters chicken stock
1 teaspoon salt
1 teaspoon soy sauce
225g pork fillet (tenderloin) cut into very thin strips
2 medium cucumbers, peeled, halved lengthways, seeded and cut into 1/2 cm in slices

Method :

1. Port the stock, salt and soy sauce into a large saucepan and stir in the pork strips.

2. Bring to the boil over moderate heat and cook for 10 minutes. Add the cucumbers to the pan and return to the boil. Cook for 3 minutes, or until the cucumbers are translucent.

3. Transfer the soup to a warmed tureen; ready for serve.
