Serves 2
Ingredients :
Spray olive oil
1 skinless chicken breast fillet (cut into thin slices)
1 ½ cups water
½ x 500g packet frozen Birds Eye Country Harvest Peas, Corn, Carrots and Broccoli
75g packet 99% fat free 2 minute noodles
½ teaspoon contents of flavour sachet from noodles
1 tablespoon chunky peanut butter
1 tablespoon mild sweet chilli sauce
Method :
1. Spray a medium saucepan lightly with oil. Heat pan, add chicken and cook until browned.
2. Add water and Birds Eye Vegetables and bring to boil, cove and simmer for 5 minutes. Break noodles into pieces and add to pan along with ½ teaspoon from flavour sachet.
3. Drain off most of liquid reserving approximately ½ cup. Stir in peanut butter and chilli sauce and heat gently for 1-2 minutes.
