Shrimp with Walnut

Serves 4

Ingredients :

1 cup (236 ml) water
2/3 cup (160 ml) white sugar
1/2 cup (120 ml)walnuts
4 egg whites
2/3 cup (160 ml) rice flour
1/4 cup (60 ml) mayonnaise
1 pound (0.45 kg) large shrimp, peeled and de-veined
2 tablespoons (30 ml) honey
1 tablespoon (15 ml) canned sweetened condensed milk
1 cup (236 ml) vegetable oil for deep-frying

Method :

1. Stir the water and sugar together in a small saucepan. Bring to a boil and add the walnuts. Boil for 2 minutes, then drain and place walnuts on a cookie sheet to dry.

2. Whip the egg whites in a medium bowl until foamy. Stir in the rice flour until it has a pasty consistency.

3. Heat the oil in a medium-high heat. Dip shrimp into the rice flour batter, and then fry in the hot oil until golden brown, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.

4. In a medium serving bowl, stir together the mayonnaise, honey and sweetened condensed milk. Add shrimp and toss to coat with the sauce. Sprinkle the candied walnuts on top and ready for serve.
