Chicken and Shredded Celery

Preparation time : 6 minutes
Cooking time : 10 minutes

Serves 2-3

Ingredients :

2-3 tablespoons celery
1-2 tablespoons bamboo shoots
2 tablespoons Chinese mushroom
3 tablespoons raw breast of chicken
3 dessertspoons peanut oil
Ginger sherry
Sesame oil
Pepper, salt, sugar and Ve-Tsin
2-3 tablespoons stock
1/2 teaspoon cornflour
1 dessertspoon water

Method :

1. Cut the celery, bamboo shoots, mushrooms and chicken into match-stick pieces and keep them separate. They can be on the one platter as long as they are apart form each other.

2. Heated 2 dessertspoons oil in a frying-pan.

  • Add the celery and toss it about while it cooks for minutes.
  • Add the bamboo shoots and mushrooms and cook them 3 minutes.
  • Add 1/2 teaspoon sherry, sesame oil and a pinch pepper, salt, sugar and Ve-Tsin and move them about in the pan.


3. Add the stock and bring it to the boil.

  • Blend the cornflour in the water and stir it in.
  • Boil for one and the half minutes.
  • Turn all into a heated dish.

4. Wipe out the pan or use another.

5. Add 1 dessertspoon oil and heat it. Toss the chicken in it while it cooks for one and the half -2 minutes.

6. Add 1/4 teaspoon sherry, few drops sesame oil and small pinch of pepper, salt, sugar and Ve-Tsin.

7. Return the vegetable mixture to the pan and move it about as you heat it through. Turn this delicious savoury mixture into a heated dish and serve at once.
