Bird's Nest Soup with Chicken Cubes and Mushrooms

Serves : 6-8

Ingredients :

225g bird's nest
1 tablespoon vegetable oil
1tablespoon chopped fresh root ginger
125g cooked chicken, cubed
125g button mushrooms, quartered
225g canned quail eggs, drained
13/4 liters chicken stock

Method :

1. Soak the bird's nests in water for 5 minutes, then drain.

2. Heat the oil in a sauce pan. Add the ginger and fry for 1 minute, stirring constantly.

3. Stir bring in the chicken, mushrooms, eggs and stock and bring to the boil.

4. Reduce the heat to low and add the bird's nests. Simmer for 5 minutes, stirring occasionally.

5. Transfer the soup to a warmed tureen or large bowl.

6. serve at once.

Remark:

This is one of classics of Cantonese cuisine and is very filling indeed. Bird's nests and quail eggs can be obtained from oriental or Chinese delicatessens.
