Bird's Nest Soup

Preparation time : 6 minutes
Cooking time : 1 hour 5 minutes

Serves : 3

Ingredients :

1 oz. bird's nests
1 oz. finely chopped raw white chicken meat
1 oz. finely chopped lean boiled ham
13/4 pints (U.S. 41/4 cups) very rich chicken stock salt to taste
1 small teaspoon cornflour
1 tablespoon water
1 beaten egg white

Method :

1. Cover the bird's nests well with cold water and leave to soak overnight.

2. Finely chop the chicken meat and ham (which should have no fat in it) and keep them separate.

3. Drain the bird's nests. Remove and discard any feathers then rinse and drain the nests again.

4. Turn the nests into a pot and add the cold stock.

5. Boil bird's nests for 1 hour. Taste, if necessary, add salt.

6. If the stock has boiled down too much add some hot water (not more stock because that would increase the saltiness too much).

7. Add the chicken meat and cook for 3 minutes. Blend the cornflour with the water, stir it in and boil for one and the half minutes.

8. Remove from heat and whisk in beaten egg white.

9. Pour the soup into a tureen or individual bowls; sprinkle the ham on top

10. Ready to serve.
