Egg Braised Chicken

Serves 4-6

Ingredients :

350g boned chicken breast, cut into thin strips about 5cm
Salt and pepper (to taste)
2 teaspoons sugar
2 teaspoons chilli sauce
2 tablespoons dry white sauce
1 tablespoon cornflour (cornstarch)
Sufficient vegetable oil for deep-frying
3 eggs, lightly beaten
75ml sesame oil
1 tablespoon chopped parsley
1 1/2 tablespoons rice wine or dry sherry
1 1/2 soy sauce
1 1/2 lemon juice

Method :

1. Sprinkle the chicken strips with the salt, pepper, sugar, chilli sauce, wine and cornflour (cornstarch), rubbing them into the meat with your fingers. Set aside to marinate at room temperature for 1 1/2hours.

2. Fill a large saucepan one-third full with oil and heat until it reaches.

3. Ready for serve.
