Fillet of Lamb with Vegetable

Preparation time : 15 minutes
Cooking time : 5 minutes

Serve 3

Ingredients :

4 oz. lamb (no fat)
1/2 teaspoon cornflour
1/2 beaten egg to bind
Salt and pepper
2 tablespoon peanut oil
1 green pepper, cut in pieces
1 tablespoon Chinese mushroom (soaked 1 hour), cut in very fine strips
1 tablespoon celery, cut in very fine strips
1 tablespoon spring onions
1 dessertspoon dry white wine
Tiny pinch Ve-Tsin
1/2 tablespoon soy sauce
1 clove garlic, finely chopped
Pinch white pepper

Method :

1. Cut the lamb in thin strips. Work in the cornflour and the egg thoroughly with a little salt and pepper.

2. Heat very well the peanut oil in a frying-pan and fry the meat in it for 1 minute. Stirring and tossing it all the time.

3. Add the green pepper, Chinese mushrooms and celery and toss and cook for 1 minute. Turn on to a sieve to drain the oil off. To the frying-pan add the onions and toss about.

4. Return the meat and vegetable to the frying-pan. Add dry white wine, Ve-Tsin, soy sauce, finely chopped clove garlic and white pepper. Heat through and toss about and turn on to a hot dish and ready for serve.
