Fried Cucumber and Pineapple

Serves 4-6

Ingredients :

2 tablespoons vegetables oil
2 small cucumber (thinly sliced crosswise)
1/2 teaspoon salt
1 tablespoon vinegar
225g canned pineapple chunks (drained)
175ml water
2 teaspoons flour
1 teaspoon sugar
1 teaspoon soy sauce

Method :

1. Heat the oil in a frying-pan. Add the cucumber slices, salt and vinegar and cook for 4 minutes, stir frequently. Add the pineapple to the pan and cook for a further 2 minutes, stir occasionally.

2. Add the water, flour, sugar and soy sauce beat together until the mixture become smoothly.

3. Pour into the frying-pan and bring to the boil, stir occasionally.

4. Transfer the mixture to a warmed serving dish and ready for serve.
