Fried Courgette

Preparation time : 2 minutes
Cooking time : 6 minutes

Serves 2

Ingredients :

6-7-inch courgette (zucchini or very young marrow)
1 crushed clove garlic
1 crushed thin slice fresh ginger
1 tablespoon peanut oil
Pinch each salt, sugar and Ve-Tsin
2-3 shakes white pepper
1/2 teaspoon ginger sherry
1/4 pint ( U.S. 5/8 cup) hot chicken stock

Method :

1. Peel the courgette thinly (If necessary) and then cut it diagonally into oval slices about 1/4 inch thick.

2. Fry the garlic and ginger in the oil until a golden brown colour. Discard them.

3. Add the slice of courgatte and toss and fry them for 1 minute.

4. Sprinkle in the seasonings and sherry. Keep frying turn over and over for 1/2 minute.

5. Add the hot stock and cook for 4-5 minutes. Turn into a heated dish.

6. Ready for serve.
