Fried Prawns and Pork Roll

Preparation time : 20 minutes
Cooking time : 15 minutes

Serves 3 - 4

Ingredients :

6 frozen pacific prawns
6 paper thin slices pork (fat)
Pinch each pepper, salt and sugar
Good pinch Ve-Tsin
2 beaten egg yolks
3 tablespoons cornflour
Peanut oil
Heart of lettuce leaves

Method :

1. Pacific prawns

i) Cut the shelled prawns almost through lengthwise.
ii) Remove the black intestinal lines and trim off rough edges. Flatten out each prawn.
iii) Divide it into 6 rectangular pieces (each just short of the full length of a prawn and a trifle narrower than the widest part). Mix the pacific prawns together with the seasonings. Lay them opened sides up.

2. Draw each piece of pork (fat) on one side.

3. Used only the egg yolks. Then, beaten the egg yolks and place it.

4. Dip each portion in the cornflour (shake off excess). Then dip in the egg yolks and, again in the cornflour. Roll up the prawns and pork (slices).

5. Heated the peanut oil in a frying-pan. Place the prawns and Pork roll and fry until golden brown. Control the heat.

6. Arrange portions on lettuce heart and ready for serve.
