Fried Pacific Prawns

Serves 4

Ingredients :

1 tablespoon ginger sherry*
1 tablespoon sesame oil
1 dessertspoon red bean curd
1 finely chopped fair-sized clove garlic
2 chopped sliced fresh ginger
Pinch pepper
Good pinch salt
Good pinch Ve-Tsin
Tiny pinch sugar
1 tablespoon beaten egg
8 pacific prawns
2 tablespoons self-raising flour
2-3 tablespoons peanut oil

*Cut 2 oz. fresh ginger into thin strips. Turn them into a bottle and cover with half bottle warm brown sherry. Leave of infuse, strain and use as directed.

Method :

1. Cut through the back of each pacific prawn and remove the black intestinal lines.

2. Mix the pacific prawns together with 10 ingredients. Sprinkle the pacific prawns with the flour.

3. In a large frying-pan heat the peanut oil till hot. Add the prawns into frying-pan, shake and turn the pacific prawns until the shells turn to bright red colour. The prawns are sufficiently cooked.

4. Transfer to a heated dish and ready for serve.
