Fried Rice

Serves 4-6

Ingredients :

225g long-grain rice (soaked in cold water for 30 minutes then drained)
450ml water
1 1/2 teaspoon salt
2 tablespoon vegetable oil
2 medium onions(finely chopped)
225g cooked ham (finely chopped)
2 tablespoons petits pois
2 medium tomatoes (blanched, peeled and quartered)
225g frozen shrimps (thawed and shelled)
1 tablespoon soy sauce
1 egg (lightly beaten)

Method :

1. Prepare the rice

i) Put the rice into a saucepan and pour over the water.
ii) Add 1 teaspoon of salt. Bring to the boil, reduce the heat to low and cover the pan.
iii) Simmer for 15 to 20 minutes, or until the water has been adsorbed and the rice is cooked and tender. Remove from the heat.

2. Heat the oil in large saucepan. Add the onions and fry until golden brown. Add together with ham, petits pois, tomatoes, shrimps and remaining salt then stir/cook for 1 minute.

3. Add the rice into saucepan with soy sauce and egg and stir it constantly for 2 minutes.

4. Transfer the mixture to a warmed serving dish and ready for serve.
