Fried Spinach

Preparation time : 10 minutes
Cooking time : 4-5 minutes

Serves 2-3

Ingredients :

8oz. spinach, stalks discarded
1 crushed clove garlic
1 tablespoon peanut oil
1/4 pint ( U.S. 5/8 cup ) hot chicken stock
Pinch each salt, sugar and Ve-Tsin ( Monosodium glutamate )
1/2 teaspoon soy sauce
1/2 teaspoon cornflour
1 dessertspoon water

Method :

1. Clean the spinach three times with water in to make sure that all the grit has been removed. Lift out and drain thoroughly.

2. Fry the garlic with hot oil until golden brown and then discard it. Add the spinach into cooked garlic at high heat for 1 minute (tossing and turning it). Add the hot stock, seasoning and soy sauce and boil for 2 minutes.

3. Blend the cornflour with the water and stir it in. Boil for 1 1/2 minutes. Turn into a heated dish and ready for serve.
