Fried Soft Noodles

Preparation time : 15 minutes
Cooking time : 8 minutes

Serves 2

Ingredients :

1/2 recipe noodle dough
1 tablespoon peanut oil
1 slice onion1/4 pint ( U.S. 5/8 cup) chicken stock
good pinch each salt, sugar and Ve-Tsin
1/2 teaspoon soy sauce
1/2 teaspoon dark sauce
1 teaspoon cornflour
1 dessertspoon cold water

Method :

1. Boil the noodles for 10 minutes then drain them well.

2. Heat the oil and toss the onion in it for 1/2 minutes. Add the drained cooked noodles in it. Then turn it over and over to coat them with the oil.

3. After Add the stock, seasonings, soy sauce and dark sauce then cook for 4-5 minutes.

4. Blend the cornflour with the water and stir it in, adding a little extra stock (if necessary). Boil for 1 1/2 minutes.

5. Turn all into a heated serving dish and garnish with the onion flower.

6. Ready for serve.
