Hot and Sour Soup

Serves 6

Ingredients :

2 tablespoons sesame oil
2 medium onion (finely chopped)
2 tablespoons flour
1 1/4 liters chicken stock
Juice of lemon
2 tablespoons soy Sauce
1/4 teaspoon monosodium glutamate (MSG), (optional)
Salt and pepper to taste
275g bean sprouts
Chinese dried mushrooms (soaked in cold water for 20 minutes, drained and chopped)
125g canned bamboo shoots (drained and finely chopped)
125g cooked chicken (finely diced)

Method :

1. Heat the oil in a large saucepan. Add the onions and fry until golden brown. Set aside.

2. Blend the flour with the water and stir it. Return the pan to moderate heat and Add all the remaining ingredients to the boil, stirring constantly. Then, cover the pan, reduce the heat to low and simmer for 1 hour.

3. Transfer the soup to a warmed tureen and ready for serve.
