Peking Duck

Serves 6

Ingredients :

1 Duck
1 tablespoon light sauce
2 cup of hot water
3 tablespoons honey
4 slices ginger
20pcs spring onions
1 cucumber
1 packet of frozen small spring roll or pastry

Sauces :

3 tablespoons hoisin sauce
2 tablespoons water
1 teaspoon sesame oil
1 teaspoon sugar

Method :

1. Marinate the whole duck (inside and outside body) with light sauce. Place it into fridge and leave for overnight (uncovered) .

2. Dissolves the honey with hot water. Baste the duck with the honey glaze, place ginger slices inside cavity and roast the duck in convention oven with pre-heated 200 deg C for an hour.

3. Slices the spring onion. For the cucumber, discard the skin and seeds.

4. To make the sauce, place all the sauces into a small saucepan and add the spring roll pastry to boil for 15 minutes until the sauce thickened.

5. Turn the roast duck into heated dish with spring onion and cucumber.

6. Ready for serve.
