Peking Hot and Sour Soup

Preparation time : 8 minutes
Cooking time : 40 minutes

Serves 4

Ingredients :

4-6 pieces lichen (Soak the lichen overnight in cold water)
1 Dried Chinese Mushroom (Soak in the water for 1 hour)
1 3/4 -2 pinch ( U.S. 41/4 -5 cups) chicken stock
4 tablespoons raw ham, pork or chicken(either one) cut into strips
2 tablespoons canned bamboo shoots
Salt and white pepper
White wine vinegar
1 teaspoon cornflour
1 tablespoon water
1 egg

Method :

1. Drain the soak lichen and soak mushrooms and cut it into small slices.

2. Boil the water in the pot. When the water boiled, add in chicken stock, (raw ham, pork or chicken (either one)) for 2 minutes.

3. Then add the bamboo shoots, pinch salt (to taste), pepper, vinegar and remaining ingredients into pot. Cover and let simmer for 30 minutes.

4. Blend the cornflour with water, stir it. Place into the pot for 1 1/2 minutes. Remove the pot from heat. Then, trickle the beaten egg in the pot and stir it.

5. Ready for serve.
