Prawns Stir-fried with with Snow Peas (Mangetout)

Preparation time : 5 minutes
Cooking time : 5 minutes

Serves 4

Ingredients :

1 slice fresh ginger (Crushed)
1 clove garlic (Crushed)
2 tablespoon cooking oil
4 oz. prawns (shelled and cooked)
1/4 pint ( U.S. 2/3 cup ) chicken stock
Pinch each salt, sugar and Ve-Tsin
1 teaspoon soy sauce
5-6 oz. snow peas
1 level teaspoon cornflour
1 dessertspoon water
If chicken stock is not available use 1 chicken bouillon cube with water.

Method :

1. Place the peanut oil in a large frying-pan. Add the crushed ginger and crushed garlic cook until golden brown then set aside.

2. Stir-fry the cooked prawns for 1/2 minute then add the snow peas, chicken stock, salt, sugar, Ve-Tsin and soy sauce cook for another 2 minutes.

3. Blended the cornflour with the water. Then, cook together with prawns and snow peas for 1/2 minute.

4. Turn the mixture into a deep heated dish and serve.
