Prawns with Mixed Vegetables (Homemade)

Serves 4

Ingredients :

4 pacific prawns (shelled and removed intestinal lines)
3 teaspoons cornflour
Pinch each pepper, salt and sugar
Pinch Ve-Tisn
1 dessertspoon sesame oil
3 oz. carrot
3 oz. cucumber
3 oz. bamboo shoots
2-3 water chestnuts
2 tablespoon cooking oil
1/4 pint ( U.S. 2/3 cup) chicken stock (preferably hot)
1 dessertspoon water

Method :

1. Place the pacific prawns in a bowl and sprinkle with 2 teaspoons cornflour, a pinch of salt and other seasoning and sesame oil.

2. Cut the vegetables (strips) and season with salt only.

3. Stir-fry the vegetables with 1 tablespoon of the cooking oil. Add the stock and stir-fry for another 3 minutes. Transfer all to a heated dish.

4. Cook the prawns in remaining oil for 2 minutes.

5. Place the vegetables and prawns into the pan for 2 minutes. Then add cornflour (blended the cornflour with the water) and stir-fry together with vegetables and for 1 minute.

6. Ready for serve.
