Red Cooked Chicken

Serves 4

Ingredients :

2 litres water or chicken stock
1 cup chinese shao hsing wine or dry sherry
1 cup soy sauce
½ cup sugar
4 cloves of crushed garlic
1/3 cup fresh ginger chopped
4 spring onions chopped
1/3 teaspoon sesame oil
3 whole star anise
1 cinnamon quill
1 piece orange or mandarin peel
Cooking oil
Oyster sauce

Method :

1. Put all the stock ingredients in a saucepan, bring to boil and simmer gently for 20 minutes.

2. Once the stock is boiling and the chicken has been added put on a lid - this is essential to retain the heat when you turn off the heat source.

3. For a whole chicken, simmer for 20 minutes then turn off and leave for a further 20 minutes. (If a chicken by pieces, simmer for about 10 minutes then rest in the pot for another 20 minutes).

4. Take the chicken out of the pot. If it's whole, separate it into pieces. Garnish with sliced spring onion

5. Ready for serve.
