Sweet and Sour Fish

Preparation time : 10 minutes
Cooking time : 30 minutes

Serves 2-3

Ingredients :

1 large fish (lapu-lapu or tilapia)
1 large onion (sliced)
1 each of red and green bell pepper (julienned)
4 cloves garlic (crushed)
30g ginger (finely shredded)1 cup vinegar
pinch salt and sugar
1 tomato
1 tablespoon cornflour (cornstarch) dissolved in 1/2 cup water)
1/2 teaspoon MSG or vetsin
1 cup cooking oil
1 carrot (sliced)
2 tablespoons tomato sauce
2 tablespoons chili sauce

Method :

1. Marinate the whole fish (inside and outside body) with salt and vetsin for 1 hour.

2. Heat the oil in the frying pan and fry the fish until golden brown. Set aside.

3. Add 1 tablespoon of oil in the frying pan. Then, stir-fry the garlic, ginger and onion unitil fragrant. Add the bell peppers and stir-fry for another 2 minutes.

4. Put this mixture on top of the fish in the serving dish.

5. Return the pan to the heat and Add the vinegar, salt, tomato sauce, chili sauce, water and sugar in heated frying pan. Bring to a boil and then add the cornflour (cornstarch) unitl the sauce thicken.

6. Pour the sauce over the fish and ready for serve.
