Serves 2-3
Ingredients :
1 White Pomfret (rinsed, cleaned and drained)
Cornflour (lightly dust the pomfret before frying)
Cooking Oil for frying
Chilli Sambal Sauce :
3 to 5 red chillis (remove seeds)
5 cloves garlic
5 bulbs shallots
2 cm ginger
1 cm galangal (lengkuas)
1 large onion
Juice from 3 pieces of lime
2 tablespoons cooking oil
Method :
1. Sprinkle a little salt on White Pomfret (rinsed, cleaned and drained). Then, marinade for 15 minutes. Quickly rinse the salt of the White Pomfret before frying.
2. Heat up a wok with cooking oil for Deep fry the Pomfret until golden brown. Set aside.
3. Heat 2 tablespoons cooking oil on medium heat and lightly stir-fry chilli sambal paste till fragrant (about 3 minutes or more). Add the salt and sugar then stir-fry for another 1 minute. Set aside.
4. Pour the Chilli Sambal Sauce over the fried pomfret on serving plate.
5. Ready for serve.
