Chicken with Oyster Sauce

Preparation time : 5-6 minutes
Cooking time : 4 minutes

Serves 2

Ingredients :

4 oz. raw chicken breast
2 teaspoons cornflour
1 tablespoon water
1 dessertspoon peanut oil
5/8 cup chicken stock
pinch each salt and sugar
pinch monosodium glutamate
1/2 teaspoon ginger sherry
1 dessertspoon oyster sauce
parsley

Method :

1. Cut the chicken breast into very thin slices. The best way to do this is to place the meat on a board then, holding it firmly with one hand, slice it with the other.

2. Blend the cornflour with the water.

3. Heat the oil till hot. Fry the chicken pieces in it for 1 1/2 - 2 minutes, stirring and tossing them as they cook.

4. Add the stock, seasonings, sherry, remaining cornflour mixture and oyster sauce. Bring to a good boil and simmer for 1 1/2 minutes.

5. Turn into a heated dish and garnish with parsley.

6. Ready for serve.
