Chicken with Walnuts and Celery

Preparation time : 20 minutes
Cooking time : 8 minutes

Serves 4

Ingredients :

225g boned chicken, cut into 2.5cm pieces
2 teaspoons soy sauce
2 teaspoons brandy
1 teaspoon cornflour
salt and pepper
2 tablespoons oil
1 clove garlic, left whole
120g walnut halves
3 sticks celery, cut in diagonal slices
140ml chicken stock
2 teaspoons oyster sauce

Method :

1. Combine the chicken with the soy sauce, brandy, cornflour, salt and pepper.

2. Heat a wok and add the oil and garlic. Cook the garlic for about 1 minute to flavour the oil then remove.

3. Quickly stir-fry the chicken in the heated wok with oil. Remove the chicken and add the walnuts to the wok. Cook for about 2 minutes until they are slightly look brown.

4. Slice the celery, add to the wok and cook for 1 minute.

5. Add the oyster sauce and stock and bring to the boil. When boiling, return the chicken to the pan and stir well.

6. Ready for serve.

Remark:

Oyster sauce lends a subtle, slightly salty taste for dish "Chicken with Walnuts and Celery".
