Fried Celery

Preparation time : 4 minutes
Cooking time : 8 minutes

Serves 2

Ingredients :

6-7 tablespoons celery
1 clove garlic
1 slice fresh ginger
1 tablespoon peanut oil
Pinch each salt, sugar and Ve-Tsin
2-3 shakes white pepper
1/2 teaspoon ginger sherry
1/4 pint ( U.S. 5/8 cup) hot chicken stock

Method :

1. For this dish, use the inner stalks of celery. Cut the stalks diagonally into 1-inch strips. Crush the garlic and ginger.

2. Heat the oil in a frying-pan, cook the garlic and ginger until golden brown and then discard them.

3. Add the celery into the pan together with seasonings, sherry and stock. Then, cook for 5-6 minutes.

4. Turn into a heated dish.

5. Ready for serve.
