Fried Mixed Vegetables

Serves 4-6

Ingredients :

3 tablespoons vegetable oil
1 garlic clove (crushed)
2 1/2cm fresh root ginger (peeled and finely chopped)
Salt and pepper (to taste)
2 carrots (thinly sliced on the diagonal)
1 small green pepper (pith and seeds removed and chopped)
1 very small cauliflower (broken into small flowerets)
50g bean sprouts
150ml Chicken stock
2 tablespoons soy sauce
1 teaspoon soft brown sugar

Method :

1. Heat the oil in a large frying-pan.

i) Add the garlic, ginger, salt and pepper, then stir-fry for 1 minute.
ii) Add the carrots and stir-fry 1 minute.
iii) Add the green pepper and cauliflower and stir-fry for 3 minute.
iv) Add the bean sprouts and stir-fry for 1 minute. Stir in the remaining ingredients and bring to the boil.

2. Reduce the heat to low, cover and simmer for a further 4 minutes.

3. Transfer the mixture to a warmed serving dish

4. Ready to serve.
