Ginger Duck

Preparation time : 5-6 minutes
Cooking time : 6-8 minutes

Serves 2

Ingredients :

4-5 tablespoons raw duck breast meat
pinch bicarbonate of soda
15 thin slices fresh ginger
2-3 young spring onions
good pinch each salt and monosodium glutamate
1/2 teaspoon sugar
several shakes pepper
3 teaspoons ginger sherry
2 tablespoons peanut oil
4 tablespoons hot chicken stock
1 teaspoon cornflour
1 dessertspoon water

Method :

1. Place the skinned raw duck breast meat on a board and cut it diagonally into slices.

2. Work the bicarbonate of soda into raw duck breast meat and leave it for at least 1 hour. (Duck is firm meat. The effect of the soda is to tenderize it.)

3. Cut the ginger into thin strips and the onions into 2 inch lengths.

4. Add the seasonings and 2 teaspoons sherry into raw duck breast meat .

5. Heat the oil in a frying pan. Add the raw duck breast meat and toss it while cooking for 3 minutes.

6. Add the ginger and onions and cook for another 2 minutes. Add the hot stock and the remaining ginger sherry. Bring to the boil.

7. Blend the cornflour with the water and stir it. Add into the boil ginger duck for 1 1/2 minutes.

8. Turn into a heated dish and ready for serve.
