Ham and Vegetable Soup

Serves 2-3

Ingredients :

2 pieces ham
1-2 bamboo shoots(precut into sticks)
5 - 6 shiitake mushrooms (sliced thinly)
1 block silken tofu (cut into 1 inch cubes)
green Chinese vegetables (washed of any dirt, rinsed, and drained)
2 tsp vegetable oil
3 slices ginger
Pinch salt and white pepper
1/2 tablespoon sesame oil

Method :

1. Pour warm water over the dried shiitake mushrooms to rehydrate them, cover and set aside for 5 minutes. Slice into thin strips.

2. Heat 2 tsp of vegetable oil over medium high heat in a large sauce pan.

3. Add the ginger slices and fry in the oil until fragrant. Add the shiitake mushrooms, bamboo shoots, ham and stir fry for a minute or two.

4. Add the chicken or ham stock and tofu and bring to a simmer. Skim any foam that appears. Simmer for 20 minutes. (Don't stir too much or you'll break up the tofu).

5. Boil the soup and add the salt and white pepper into soup together with vegetables, and ham.

6. Remove from heat. Drizzle the sesame oil on top.

7. Ready for serve.
