Soy Chicken Noodles (Soup)

Preparation time : 10 minutes
Cooking time : 12 minutes

Serves 4

Ingredients :

400 g Skinless Chicken Breast Fillets (thinly sliced)
100 g Fresh Baby Corn (halved lengthways)
1 red capsicum (cut into thin strips)
1 bunch broccolini (cut into 5cm lengths)
1 tablespoon Olive Oil
75 g Whole Blanched Almonds
365 g jar Honey Soy
2 x 200g pkt Udon Noodles (separated gently with fingers)

Method :

1. Heat oil in a wok over high heat. Add almonds and cook for 2 minutes or until golden brown. Transfer to paper towel to drain.

2. Reheat wok over high heat. Add chicken and stir-fry for 3 minutes or until golden brown. Add broccolini, capsicum and corn. Stir-fry for a further 2 minutes.

3. Reduce heat to medium and add the noodle sauce and noodles. Toss for 5 minutes or until heated through.

4. Divide honey soy noodles among serving bowls. Top with almonds and ready for serve.
